In a pigment ink set all the colour inks are glossy and they work on glossy or matte paper. The gloss black will work on matte paper but gives a weaker black than the MK, which is generally pure carbon.
Hey! You make me remember that I read somewhere on the Internet that HP black pigment ink (the one specially for text printing only) is made from carbon particles...

Most 4 colour printers mix the C,M, Y to make black regardless whether they are pigment and dye
and all of the Tri colour cartridge HP printers have been do that for years quite happily.

The black ink in K channel must be very..."unique" (The Hat, what's the correct English word here???

Maybe it’s special your looking for, not too sure but the Epson black is Matte black
for use with plain paper only, and it probabily won’t mix with the other three colours. (Guessing)

This test print that I posted for you earlier on another thread has one of the strips done the very same way by using only CMY to produce the black swatch (Top one)
