An Epson printer with ARC chips/cartridges stops printing as soon as a cartridge is reported empty and not recognized anymore. There is no way with Epson printers to disable that. You have to get the cartridge out and then to insert it again triggering the reset on the ARC chip. If such chips are used in combination with a CISS it would be difficult to remove an individual cartridge, there may be a reset button to disconnect the chip shortly and sometimes a battery for the actual reset. That all depends on the cartridge/chip type and design. Epson firmware does detect non-genuine cartridges/chips and typically displays a pop-up window to let you confirm the use of a non-genuine cartridge. Refill of genuine Epson cartridges is typically not done due to some internal construction and resetters are not popular at all with the availability of ARC chips.
