Do Maxify 5120 printers automatically do a head cleaning?

I don't know Canon Maxify printers, but Pixma printers do some automated printhead cleanings at various intervals determined by counters and timers. They even do a cleaning one minute after having printed a job of only one page. I think Maxifys will do the same.

You could try printing a one page job, for instance a nozzle check and notice if the printer starts a printhead cleaning after one minute.

Yes Maxifys do that, and the LCD screen informs you when that eventually happens. I think all Canon printers perform automated cleanings on their own, but many models do it without bothering to tell the user what they're doing. You try to print something and the machine starts making noises for a while before printing anything. Maxifys are more 'polite' in this sense.

I still have to do a Feckin nozzle check before printing, because it tends to lose the yellow when left neglected, even if it runs a head clean beforehand .. Why the yellow ? I don’t really know..

I don't know about Maxify, but for Canon printers each time you turn them ON they do a head cleaning. It's the reason why for using ink you'd rather let them ON even if you don't use them. A study about ink use has been done and you can use up to ten more ink thatn really needed.

That's not true. Canon printers do head cleanings when you try to print something and a certain number of hours had elapsed since the last cleaning.
If your turn off and on a printer every five minutes it won't perform a cleaning every time. No matter if you left the printer always ON or not, cleanings will occur when a printing job is sent to the machine and the scheduled time for cleaning has elapsed.

Indeed, even in the endlessly quoted PRO-9500 maintenance manual power ON or OFF isn't discussed.
No idea if disconnecting from the mains interferes with the scheduling.

Yes it does, most if not all Canon printers do a new cleaning cycle when they have been cut off from the power socket for any length of time, leaving the printer on 24/7 is just a waste of energy and totally unnecessary, I reckon it speeds up the end of life for the print head.

As I said here time ago, my Maxify sits on another room away from the computer and totally disconnected from the power socket. If I print, for instance, twice a week during some minutes, this is the only period of time that the machine is powered. No compulsory cleaning cycle every time I print. Canon only knows exactly what triggers a cleaning on the Maxifys, but keeping them unplugged from the mains doen't seems to be a factor.

Sorry but just have a look at this quite old CANON reply : "The amount of ink being used does seem excessive, however, I must advise you that your printer will perform a clean every time it is turned on and off and will use ink for this process"
